The original data is restored for both files and folder. For folders, if they contain other subfolders or files, it will be changed during the restore time because of the modifications, as you assumed. For files, the restored original data remains.

FBackup is trying to extract the files from the backup archive, but it cannot find it.

FBackup keeps track of the latest backup version only. The old backups are deleted when a new one is created.

Hi, I am not sure I understand your situation. Did you imported the backup jobs in FBackup 7? If not, please open FBackup 7, go to File->Tools->Import from version 6 Select all jobs and press Import.
