What type of backup should I use to backup a portable application (Thunderbird)?
Source: Folder containing Thunderbird Portable application
Destination: External HD
I need the backup to copy all the files in the source folder even if they existed in the previous backup, i.e. even if they have been updated.

p.s. To test the backup I'd want to run the email program from the external HD. If I manually copy the folder to the external drive this works fine, but isn't automated, so I'm trying to use FBackup.

You should use the Full backup type as it will copy all files and put them into a zip archive.
